I grew up drinking this delicious and refreshing Bebida de arroz con piña all the time in Panama and it is the perfect way to use the whole fruit. You basically don’t waste anything. Not only can you eat the delicious fruit but you can use the skin for a nutritious and refreshing drink . So if your goal is to create less waste and be more sustainable while cooking this recipe gives you a good start. So next time you buy a pineapple give this drink a try and believe me you wont be disappointed and in addition to being delicious the skin of the pineapple is rich in vitamin C as well.

  1. Add the rice, water, pineapple skins and cinnamon stick to a large pot bring to a boil. Cook until the rice is fully cooked. Add more water if dries before the rice is cook.
  2. remove the cinnamon skin and add the rice and pineapple mixture to a blender and blend until well mix.
  3. strain the pineapple, rice mixture. Add the milk, vanilla, nutmeg and sugar.
  4. serve VERY cold and enjoy.
