Vinaigrettes are simple mixtures of vegetable oil, salt, and vinegar. These ingredients have been used to enhance salad greens since ancient times. Normally the traditional formula for vinaigrette is 3 parts oil to 1 part vinegar. The best way to use your vinaigrette is a room temperature although you will need to storage in the fridge after use and you can keep it for up to 2 weeks. Just make sure you bring the dressing back to room temperature before using.

Instructions
  1. Have all ingredients at room temperature.
  2. In a blender with the blade in place combine the vinegar and seasonings (shallots and garlic) in the blender jar.
  3. With the blender running at high speed, pour the oil in a thin stream through the lid opening or feed tube.
  4. Taste and correct the flavor balance.
Recipe Notes

Store in a freshly sanitized squeeze bottle or nonreactive container at room temperature up to 3 hours or refrigerated up to 1 week. Bring to room temperature before using.
